Description

A homogenizer is a device used for homogenizing and emulsifying liquid materials (liquid-liquid or liquid-solid phases) with a viscosity below 0.2 Pa·s and a temperature below 100°C. It is primarily applied in the food or chemical industries,

such as in the homogenization and emulsification processes during the production of dairy products, beverages, cosmetics, pharmaceuticals, and other products.

Application of Homogenizers in Food Processing: In food processing, homogenizers refine materials by subjecting liquid ingredients to triple actions—compression, intense impact, and pressure-release expansion—enabling more uniform mixing.

For instance, in dairy processing, homogenizers break down milk fat into finer particles, enhancing product stability and resulting in a whiter appearance.

Homogenization is primarily achieved through homogenizers, making them essential processing equipment in the food, dairy, and beverage industries.

The working principle involves generating pressure oscillations through mechanical hammering to achieve material fragmentation and mixing.

In the food industry, soy milk processing employs 20-30 MPa pressure to refine fat globules, while dairy production utilizes 16.7-20.6 MPa pressure to prevent fat separation.

3.2 Main functions are following :

Emulsifying homogenizer product features

1. Structural features: three ceramic plungers drive alternately, ultra-high pressure design, material pulse is very stable. Standard plunger lubrication device, longer sealing life.

2. Homogeneous pressure: large design pressure 200 0b AR / 200M p A / 29 000 ps I.Choose sanitary grade pressure sensor or imported digital diaphragm pressure gauge.

3. Homogeneous flow: small sample volume 5L, can be emptied online, less material consumption.It is especially suitable for pilot production of about 100 to 500 liters.

4. Intelligent Technology:

A. Man-machine interaction touch screen automatic control interface, the main control components are all selected Siemens brand, high sensitivity, simple operation.

B. Three-level password operation permission. Process data can be stored and invoked as required.

C. The sanitary pressure sensor monitors the feedback pressure data in real time, and sets the working pressure as required to ensure the stable operation of the equipment.

D. The generation temperature sensor monitors and feeds back the discharge temperature in real time to ensure that the discharge temperature of heat-sensitive materials is always within the required range.

E. Real-time monitoring and alarm function of equipment operation, timely display and alarm of abnormal pressure and temperature, startup with pressure, abnormal power supply, etc.

F. The system is strictly set up for safety, and the equipment is forbidden to run beyond the limit of high pressure and high temperature to ensure the safety of operators and equipment.

5. Sanitary cleaning: The materials of parts in contact with materials are all FDA/GMP approved materials. Support CIP online cleaning.

Applications

1. Applied in biopharmaceuticals; food industry; personal care products; coatings and inks; nanomaterials; petrochemicals; printing and dyeing auxiliaries; papermaking industry; pesticides and fertilizers; plastics and rubber; power electronics; and other fine chemical industries.

2. Application of Homogenizers in Soy Milk Production: During homogenization, soy milk is forced through the narrow slit of the homogenizer valve under high pressure. Under the combined effects of shear force, impact force, and cavitation, particles such as fat globules and proteins undergo micronization. This creates a uniformly dispersed emulsion, preventing fat separation and protein precipitation while enhancing the glossiness and stability of the soy milk.

3. The homogenization effect of soy milk is influenced by three factors: homogenization pressure, temperature, and number of passes. Pressure is constrained by equipment limitations; pressures of 20–30 MPa are typically used in soy milk production. Temperature is generally controlled between 55–65°C during homogenization, with 1–2 passes being optimal.

4. The homogenization process can be placed either before or after soy milk sterilization. Both arrangements have advantages and disadvantages. When homogenization precedes sterilization, the sterilization process may partially disrupt the homogenization effect, making soy milk prone to oil streaking. However, this process reduces the chance of contamination after sterilization, offers higher storage safety, and involves relatively lower equipment costs. Additionally, homogenized soy milk entering the sterilizer is less prone to scaling. If homogenization follows sterilization, the above conditions are reversed.

5. Application of Homogenizers in Raw Milk: Under intense mechanical pressure (16.7–20.6 MPa), large fat globules in milk are broken down into smaller globules. This ensures uniform dispersion throughout the milk, effectively preventing fat globule separation. In pasteurized milk production, homogenizers are typically positioned in the first heat recovery section before sterilization. In UHT milk production using indirect heating, the homogenizer is positioned before pasteurization. In UHT milk production using direct heating, the homogenizer is positioned after pasteurization. Therefore, a sterile homogenizer must be used. Homogenization not only prevents fat globule separation but also offers additional benefits: the diameter of homogenized milk fat globules is reduced, making them easier for the human body to digest and absorb. Homogenization softens milk protein curds. This promotes digestion and absorption. In enzyme-based cheese production, homogenization accelerates milk coagulation and enhances flavor consistency in dairy products.

6. Preheating is required before homogenization, reaching 60–65°C. The homogenization method typically employs a two-stage process: the first stage uses higher pressure (16.7–20.6 MPa) to break fat globules, while the second stage uses lower pressure (3.4–4.9 MPa) to disperse the broken fat globules and prevent agglomeration.

7. Application of homogenizers in citrus juice: After centrifugal separation, citrus juice particles are already fairly uniform. To further refine particle size, homogenization at 20–35 MPa can be performed post-centrifugation.

8. Application of Homogenizers in Peach Pulp Juice Beverages: Employing a homogenization pressure of 25–35 MPa enhances the affinity between pectin and juice. This process improves juice stability, reduces particle size and density variations, prevents sedimentation and separation of the pulp mixture, and results in a uniformly viscous texture with a smooth mouthfeel.
